This one comes in just under the wire on the very last day of the month. As far as the ingredients are concerned it looks very similar to the Courgette and Mushroom Bake I posted last year but it tastes very different – probably due to the yoghurt.



2 oz Margarine                   1oz Breadcrumbs
3 medium courgettes          4 fl oz Yoghurt
1 Clove Garlic                    1 Tb Chopped Almonds
4 oz Mushrooms                 1 tsp Paprika
7oz Canned Tomatoes        1.5 oz Cheese

Slice and saute courgettes in frying pan. separately sauté garlic and mushrooms for about 3 minutes. Add chopped tomatoes and sauté for a further 3 minutes. Stir in breadcrumbs, yoghurt, almonds and paprika and sauté for another minute. Remove from heat, add courgettes, mix and spoon into baking tin. Top with grated cheese and put in Mark 4 oven for 30 minutes. serves 2

I sometimes mix some parmesan into the mixture, and also occasionally use pine nuts instead of the almonds – it always tastes good. Want to track down that Courgette and Mushroom Bake?
