I'm offering two recipes for the same dish here - one quick and tasty version, one not so quick but much more tasty one. They both look exactly the same, and just like so many of the other dishes I've already posted here -



half ounce butter
half ounce flour
quarter pint milk
2 ounces cheese
Half a large cauliflower
1 egg
2 sliced tomatoes

Cook the cauliflower and, meanwhile, make a white sauce by melting the butter, adding the flour, stirring for a few moments and then adding the milk and stirring until you've got a smooth sauce. (I often just throw all the ingredients in together at the same time and beat in a mild frenzy - it works fine). Season with salt and pepper, add most of the grated cheese, then allow to cool for a few minutes. Separate the egg and add the beaten yolk to the sauce.  Put the cooked cauliflower into an oven proof dish - a soufle dish is ideal - cover with layers of tomato and then beat the egg whites until they're stiff. Fold into the sauce and then pour over the cauliflower/tomato mixture. Sprinkle the remaining cheese over the top and then put into an oven at 200 (Gas 6) for 30 minutes.

The tastier version? As above except, instead of the tomatoes, try the following -
Heat a little olive oil in a small saucepan, add a couple of tablespoons of tomato pure and keep stirring. Add a can of chopped tomatoes, a teaspoon or so of basil and the gently cook until you've got a rich, reduced tomato sauce. Use a few tablespoons of this instead of the tomatoes. This sauce is great for all sorts of dishes, particularly if you add a little red wine to it. Pour it over some cooked pasta, sprinkle with parmesan and you're done!

The BACP Research Conference is arguably the counselling conference of the year, and this year it's taking place in Cardiff - a lot nearer than it's been previously. It runs over three days  and costs as much as £410 if you're a BACP member, £440 if you're not. However, there's a special reduced fee for BACP Student Members of just £70 per day - and you can book by the day - you don't need to go to all three. If you're quick there's an "early bird" rate of  just £60 for bookings made before 4th April. This conference is well worth attending, and you can find out more here.

Just a reminder that there's still money available for Academic Enhancement Bursaires. If you can demonstrate a commitment to achieving academic excellence and are looking to participate in an extra-curricular activity then it would be worth  you considering  applying for one. Your first step should be to contact Student Services for more information - or to have a look at their web site and/or download the information sheet attached to this posting. This is money that's available to help you to do something or go somewhere that would help you in your learning - attending conferences, visiting exhibitions, whatever. This is money being given away - go for it!

You'll have seen from a previous posting that this was a forum where the students were outnumbered by staff by about six to one - hopefully we'll manage to reverse that trend next time. If you're a Certificate student hoping to go on to the Diploma you'll probably be engaged in sorting out a counselling placement for next year by now. If you've just done a skills session that needs transcribing for an assessment - and a lot of Certificate students just have - then you may well find a piece of software - Express Scribe - worth investigating. It's free, and you'll find a link to the download site over on the right hand side of this page. If you look on the "Resources" page - and the link to that is also over on the right - you'll also find a short video showing you how to download, install and use the software. It'll save you a lot of time if you explore this one.

Really sorry to only see one student rep at today's Staff Student Forum - she was outnumbered by staff something like six to one! It's a pretty tough job for one rep to represent the views of so many different groups of students (Certificate day, Certificate evening, Diploma Integrative, Diploma CBT etc) anyway, but this has always been an opportunity for staff and students to really work together in exploring the development of the course - and that takes lots of people. I'll be posting information about the date of the next meeting on a very regular basis!

You can now gain access to the National Library of Wales electronic resources.  You will need to apply for a National Library of Wales reader’s ticket using the following link http://www.llgc.org.uk/index.php?id=readerstickets, which gives you the opportunity to apply for a National Library of Wales Athens account.  Once you have a National Library of Wales Athens account you will be able to access many of the National Library of Wales electronic collections of books and journals, including JSTOR
