One of my absolute all time favourites, and very strongly recommended.




    4oz Mushrooms                Half Tb Dried Basil
    3 oz Cheese                      1clove garlic chopped
    2 Medium Courgettes       1 Tb Tom pure
    Olive Oil                           Parmesan Cheese


Lightly oil a baking dish. Gently saute the mushrooms in oil and transfer to the dish. Sprinkle with half of the basil and garlic. Meanwhile slice the courgettes into discs (about quarter of an inch thick) and saute in more of the oil - it's easiest to do this in a frying pan because you'll want them to turn them over at some point. When they're browned on both sides trasfer to the dish in a layer over the mushrooms. Sprinkle with remaining basil and garlic. Mix the tomato pure with a little water and pour over courgette and mushrooms Thinly slice the cheese and lay over the top of the courgettes and sprinkle with parmesan. Bake 30-35 minutes at 375 (5) (160). This recipe serves 2. It's even better if you finely chop some sun dried tomatoes and sprinkle them between the layers!

If you're coming on to the Diploma this year it's worth knowing that the residential weekend is going to be a good deal earlier than it has been in previous years. The dates for your diary are 27-28th October 2007. At least there's little chance of being snowed off in October!

Just a few pictures from the counselling conference - the tenth one we've held. The guest speakers were Geff Faris and Keiron Vivian-Byrne. It was a great day, as hot as ever, and very well recieved. Next year's date is currently scheduled for 12th June. My birthday....
